Easy One-Pot Carrot & Coriander Slow Cooker Soup
This simple and delicious slow cooker soup is packed with flavour and requires minimal effort. Just toss everything in the pot, let it simmer, and enjoy a warm, comforting bowl of homemade soup!
Ingredients:
- 1 lb (450g) carrots, peeled and chopped
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 medium potato, peeled and diced (for creaminess)
- 1 tsp ground coriander
- 1/2 tsp cumin or a small pinch of chilli flakes (optional, for extra depth)
- 1 litre (4 cups) vegetable stock
- Salt & pepper, to taste
- A handful of fresh coriander (cilantro), chopped
- 100ml (½ cup) cream, milk, or a dairy-free alternative (optional)
Method:
- Add to the Slow Cooker – Place the carrots, onion, garlic, potato, ground coriander, cumin/ chilli (if using), and vegetable stock into your slow cooker. Season with salt and pepper.
- Cook – Cover and cook on low for 6-8 hours or high for 3-4 hours, until the carrots are soft.
- Blend – Use a hand blender to puree the soup until smooth (or transfer to a blender in batches).
- Add Fresh Coriander – Stir in the fresh coriander and blend again for a burst of fresh flavour.
- Make It Creamy (Optional) – Add cream or milk and mix well.
- Serve – Enjoy warm with crusty bread or homemade croutons!
