Quick and Easy Stir-Fried Noodles with Chicken and Crispy Garlic Chips

Ingredients (Serves 2-3):
- 2 chicken breasts, thinly sliced
- 1 cup crispy fried chicken pieces (optional, for texture)
- 2 dried noodle bundles
- 2 red chilies, finely chopped
- 3 garlic cloves, minced
- 1 onion, thinly sliced
- 1 cup mushrooms, sliced
- 3 spring onions, chopped (separate whites and greens)
- 1 handful fresh pea shoots
- 1 handful fresh coriander, chopped
- 1 lime (zest and juice)
- 3 tbsp dark soy sauce
- 2 tbsp cooking oil (vegetable or sesame)
- 2 tbsp homemade garlic crisps (optional, for garnish)
Instructions:
Cook the Noodles:
- Cook the dried noodles according to package instructions. Drain, rinse with cold water, and set aside.
Prepare the Chicken:
- Heat 1 tbsp of cooking oil in a large wok or frying pan over medium-high heat. Add the sliced chicken breast and cook until browned and cooked through. Remove and set aside.
Sauté the Aromatics:
- In the same pan, add the remaining oil. Toss in the garlic, chilies, and onion. Stir-fry for 1-2 minutes until fragrant.
Add the Veggies:
- Add the mushrooms and the white parts of the spring onions. Stir-fry for another 2-3 minutes until softened.
Combine Everything:
- Return the cooked chicken to the pan. Add the cooked noodles, pea shoots, lime zest and juice, dark soy sauce, and a pinch of black pepper. Toss everything together until well-coated and heated through.
Crispy Chicken and Garnish:
- If using crispy chicken pieces, toss them in during the last minute for texture. Sprinkle with fresh coriander, fresh pea shoots, green parts of the spring onions, and a handful of garlic crisps for added crunch. To make the chips: i sliced garlic gloves really thinly and fry them in a little peanut oil, make sure to stand and watch these as you don't want them to burn. Once they are the desired colour and crispness remove and sit on kitchen towel.
Serve and Enjoy:
Plate your stir-fried noodles and serve with extra lime wedges on the side for a zesty kick. Perfect for a quick, satisfying, and nutritionally delicious meal!
