🍲 Mince and Onions with Cheese and Chive Dumplings Recipe 🍲
Looking for a cozy, hearty dish to warm you up? This Mince and Onions with Cheese and Chive Dumplings is a comfort-food classic with a delicious twist. Best of all, I’ve made it super simple by using a ready-made Golden Fry Dumpling Mix—because who doesn’t love a little shortcut?
Ingredients
For the Mince and Onions:
- 500g minced beef (or lamb if you prefer or do what i do and do half and half)
- 2 medium onions, finely chopped
- 2 garlic cloves, minced
- 2 medium carrots, diced
- 1 stick of celery, diced
- 400ml beef stock (or water with a beef stock cube)
- 2 tbsp tomato puree
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp smoked paprika (optional, for added depth)
- 1 tbsp oil (vegetable or olive)
- Salt and pepper, to taste
For the Dumplings:
- 1 packet Golden Fry Dumpling Mix
- 50g grated Parmesan cheese
- 50g grated Red Leicester Cheese
- 1 tbsp fresh chives, finely chopped (or 1 tsp dried)
- Water (as per packet instructions)
Method
Step 1: Prepare the Mince and Onions
- Heat the oil in a large, heavy-bottomed pan over medium heat.
- Add the chopped onions and garlic, and sauté until soft and golden.
- Add the mince to the pan and cook until browned, breaking it up with a wooden spoon as it cooks.
- Stir in the carrots and celery, cooking for another 5 minutes.
- Add the tomato puree, Worcestershire sauce, thyme, and smoked paprika, mixing well.
- Pour in the beef stock, bring to a simmer, and let it cook gently for 20-25 minutes, stirring occasionally. Season with salt and pepper to taste.
Step 2: Prepare the Dumpling Mix
- Follow the instructions on the Golden Fry Dumpling Mix packet to prepare the dough.
- Mix in the grated Parmesan and chopped chives to the dough for extra flavour. Reserving some of the red Leicester to add to the top of the dumpling
- Divide the mixture into 2 large dumplings
Step 3: Add the Dumplings
- Transfer the mince to a baking dish
- Place the dumplings gently on top of the simmering mince and onions.
- Sprinkle on the last of the Red Leicester cheese over the top of the dumplings
- Bake in the oven at 200C for 20 minutes or until the dumplings are fully cooked through
To Serve
Spoon the mince and dumplings into bowls and garnish with extra chopped chives or grated Parmesan for an indulgent finish. Serve with mashed potatoes and veg for a complete meal.
