Homemade Nutty Cranberry Granola Recipe
This delicious homemade granola is packed with oats, mixed nuts, cashews, and dried cranberries. Perfect for a breakfast topping or a snack!
Ingredients:
- 3 cups old-fashioned rolled oats
- 1 cup mixed nuts (such as almonds, walnuts, and pecans), roughly chopped
- 1/2 cup cashews (to be added after baking)
- 1/2 cup dried cranberries (to be added after baking)
- 1/3 cup honey or maple syrup
- 1/4 cup melted coconut oil (or olive oil)
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions:
Preheat Oven: Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
Mix Ingredients: In a large bowl, combine oats, mixed nuts (not cashews) and salt.
Add Wet Ingredients: Pour the honey (or maple syrup), melted coconut oil (or olive oil), and vanilla extract over the oat mixture. Stir well until everything is evenly coated.
Spread & Bake: Spread the mixture evenly onto the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until the oats are golden brown and the nuts are toasted.
Cool Completely: Remove the granola from the oven and let it cool completely on the baking sheet. It will crisp up as it cools.
Add Cashews & Cranberries: Once cooled, stir in the cashews and dried cranberries.
Store: Transfer your homemade granola to an airtight container. It will keep fresh for up to 2 weeks!
