So many people have messaged me for the recipe for these sausage rolls.. so here you go - enjoy!!

 



Here's my quick and simple recipe for homemade sausage rolls using butcher's sausages (with skins removed) and store-bought puff pastry:

Ingredients:

  • 500g sausages (from the butcher, skins removed)
  • 1 sheet store-bought puff pastry (thawed if frozen)
  • 1 small onion (finely chopped, optional)
  • 1 tsp dried thyme or sage (optional, for extra flavor)
  • 1 egg (beaten, for egg wash)
  • Salt and pepper to taste
  • Flour (for dusting)

Instructions:

  1. Preheat the Oven: Preheat your oven to 200°C (180°C fan)/400°F/gas mark 6. Line a baking tray with parchment paper.

  2. Prepare the Sausage Filling:

    • If you want a bit more flavour, sauté the finely chopped onion in a little oil until softened and golden. Let it cool. (or you can do them in the microwave in water for about 8 mins then drain and cool)
    • In a bowl, combine the sausage meat with the sautéed onion (if using), dried thyme or sage, and season with salt and pepper.
  3. Roll out the Puff Pastry: Lightly flour your work surface and roll out the puff pastry into a large rectangle, about 3-4mm thick. If it’s already pre-rolled, just unroll it on a flat surface.

  4. Form the Sausage Rolls:

    • Place the sausage meat in a line along one of the long edges of the pastry, about an inch from the edge. You want to make a long log of sausage meat.
    • Roll the pastry over the sausage meat, making sure to tuck it in tightly and seal the edge. Use a bit of beaten egg to seal the seam.                
  5. Cut and Egg Wash:

    • Cut the long sausage roll into smaller rolls (you can decide the size—bite-sized or larger ones). Typically, cut into 6-8 pieces.
    • Place the sausage rolls seam-side down on the prepared baking tray. Brush the tops with the beaten egg for a golden finish.
  6. Bake:

    • Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed up, and the sausage is cooked through.
  7. Cool and Serve:

    • Let the sausage rolls cool for a few minutes before serving. They're great served hot or cold.

Tips:

  • You can add a little mustard or chutney inside the roll for extra flavour before rolling up the pastry.
  • To make them extra fancy, sprinkle some finishing salt, sesame seeds, poppy seeds or chilli flakes on top after brushing with egg. I do a few off each topping to make them look pretty on my cake stand.
