Finally!! After a weekend of soggy weather it was actually nice enough to sit outside to eat tea tonight which was such a treat!!
I used tarragon as mine is perfect for picking out of the garden at the moment but you could use whatever herbs you like.. i often make this with parsley as this does well in my garden all year round. Sometimes i use chives or garlic chives even thyme is nice. This is always nicer with fresh herbs you just don't get the same freshness with dried
Once you have homemade kievs you will never buy shop bought again... the garlic oily inside can be quite acrid.
Feel free to play with the filling and experiment sometimes i add cheese, ham, chilli (scotch bonnet or Naga for a veryspicy kick) but you can do bacon or garlic mushrooms.
Here’s my delicious recipe for Oven-Baked Chicken Kiev:
This is for 4 people
Ingredients:
- 4 boneless, skinless chicken breasts (about 175g/6oz each)
- 3 garlic cloves, finely chopped
- Juice of 1 lemon
- Salt and freshly ground black pepper
- 1 tbsp chopped fresh tarragon
- 230g/8oz slightly softened butter
- 2 tbsp plain flour
- 1 free-range egg, beaten
- 10-12 tbsp breadcrumbs
- Olive oil, for frying
- Salt and Pepper
Instructions:
- Preheat the oven to 200°C/400°F/Gas 6.
- Slice a pocket into the centre of each chicken breast using a sharp knife.
- Mix the garlic, lemon juice, salt, pepper, tarragon, and softened butter in a bowl. Stuff this mixture into the chicken breast pockets.
- Dredge the chicken breasts in flour, dip them into the beaten egg, and then coat them with breadcrumbs. Pop these on a baking sheet and put in the fridge for at least 20 minutes.
- Heat oil in an ovenproof frying pan and fry the chicken breasts on all sides until lightly browned.
- Transfer the chicken to the oven and bake for 18-20 minutes, or until golden-brown and completely cooked through. I always make sure mine is at least 165F with my handy little thermometer.
- Serve alongside your favourite side dishes! I choose to do a few air-fried chunky chips and some homemade Caesar Salad with leaves picked from the garden. If i get enough comments i will do a separate recipe for my Salad dressing as it is an absolute winner. I was always asked to make this for BBQ's when we were in Canada
