Delicious Butternut Squash, Bacon and Chilli Soup Recipe - Pan method and Cosori Method

 





Ah, butternut squash and bacon soup—a cozy hug in a bowl! 🍲
 Picture this: I’m sitting by the window, rain tapping gently against the glass. The soup warms my hands as I cradle the bowl. The butternut squash lends its sweet, velvety goodness, while the bacon adds a salty, smoky dance. And that hint of chili? Oh, it’s like a mischievous wink—it warms me from the inside out.  It feels like Autumn today so i thought why not—so slurp away!

I have done 2 versions one for pan cooking and one for my cosori all in one - the same ingredients are used it is just the method that varies. For the Pan method you can use liquid stock or liquid and a stock cube - for the Cosori method i am using a stock cube

Instructions for Pan cooking


Don't forget to taste and season as required with salt and pepper then serve it with some nice bread!

You can always add some croutons, toasted pine nuts and a drizzle of olive oil and why not some more little bacon bits just to top it off!!

If you don't have greek yogurt feel free to substitute with sour cream


 Instructions for the Cosori pressure cooker



Pop your butternut squash, bacon and chilli on a baking sheet / tray and drizzle a little oil

Bake at 200C for 20 minutes until the bacon is nice and crispy and the butternut squash is soft when pierced with a fork

Turn on your Cosori - you can take a look at the one i have from amazon using my affiliate link here:

First turn it onto Saute add 1000ml of water along with the stock cube (i used chicken)

When the stock starts to bubble add your bakes squash and bacon mix

At this point flick it over to pressure cook and cook for 4 mins

When cooked release the steam using the handy dandy orange slider (that keeps all of the steam away from you) When it has released all of the steam and the pin pops up open the lid and carefully give the soup a good mix

Taste and season as required!


Blitz until it reaches your desired consistency - i use a stick blender for this!!




There you have it super quick and easy delicious soup and look how easy it was in the Cosori
the best thing is - how easy it is to clean afterwards

There are so many different things it can do - Sauté, Sous Vide, Keep Warm, slow cook, cook cakes, make yogurt, cook meat and poultry, do stews and broth, grains and rice as well as being a Pressure cooker, and steamer
It also comes with a cook book
